Mundovina
It is a honey distillate. An extremely unique product produced by beekeepers in the region of Arnaia since the mundovina was recently recognized as a local product with a geographical indication of mountainous Halkidiki.
HISTORY: The name mundovina is of Greco-Roman origin and means dark wine and was given this name from the intermediate stage of production. In the region of Arnaia, Halkidiki, the local beekeepers, for decades, have been using the ground beech combs and the remains of honey for the production of mundovina. The recipe of preparation, fermentation and distillation for its production has been handed down from generation to generation to this day. The main raw materials of mundovina are honey and wax.
PRODUCTION: The honey encased in the wax after the harvest, with exfoliation from the combs gathered to begin production. A mixture of honey-wax-water is boiled in order to melt the wax and form a slurry. The hot mixture is filtered with a filter while at the same time it is pressed with a special press. The filtrate flows into a tank and two liquid layers are formed. The upper layer consists of the wax (which was not retained by the filter) and is removed as the lighter one. The bottom layer consists of the sweet honey with all the sugars from the honey and wax. Then the mixture is stored in barrels to ferment. The amount of fermented sweet water after seven months is ready for distillation, which is double. The second distillation is optionally flavored with the addition of aromatic substances such as anise or mastic. The pure spirit is MUNDOVINA..!
In 2012, mundovina was recognized as a local Product of Geographical Indication (PGI) of mountainous Halkidiki.
The geographical indication and the name of a wonderful special spirit are officially registered, for which the recipe for preparing the fermentation and distillation for its production has been handed down from generation to generation to this day.
