Assyrtiko puts its structure and cool acidity and Sauvignon Blanc its extroverted fruity character in a charming and lively blend. It takes its name from Mount Athos, which our privately owned vineyards overlook as they are cooled by the breeze coming from the bay of the same name.
Vinification
Classic white vinification. Fermentation in stainless steel tanks. The wine remains on the lees for at least 6 months.
Flavor Characteristics
Light lemon color. Complex aromas of bergamot, grapefruit, pear and white flowers combined with mineral and herbal notes. Harmonious and full of freshness in the mouth, with lively acidity, purity of fruit and a soft mineral finish.

Seafood, fish and white meat with lemony sauces.
